How can I access the fonts OpenType features in Apple apps such as Text Edit, Pages and Keynote?

Apple applications use the ‘Typography’ pallete which can be accessed with Cmd + T or by simply clicking Format > Font > Show Fonts. In this window you will see an options 'cog' icon. Click the cog and select Typography. This will activate a window whereby you can choose and activate any OpenType features that are present within the fonts that you are working with.
